EGGPLANT KEBAB COATED IN TEMPURA BATTER WITH COD BRANDADE
Ingredients for cod brandade:
Finely chopped garlic and parsley
Olesa olive oil
Ingredients for eggplant with tempura:
Honey vinaigrette with Olesa olive oil
Blanch the cod and break into flakes. Place in a frying pan with one small cup of Olesa oil and one glass of milk. Add chopped garlic and parsley. Stir until it begins to thicken and remove from heat.
In another bowl, mix flour with beer until it turns to a thick cream. Coat eggplant in batter and fry.
The kebab is served with the vinaigrette on top.
Olesa de Montserrat is a municipality rich in culture and tradition, located in the foothills of the mountain of Montserrat.
